Call me lazy, but we used restaurant grade "knife gloves." Here's a link with a couple varieties. http://search.instawares.com/knife-gloves.0.3.0.htm Generally we got them a size big enough to where you could wear nitrile or latex gloves under them. We also got the really expensive 316 stainless ones because they were autoclavable. So you could sterlize them on a regular basis. It also looks like McMasterCarr (www.mcmaster.com) has an entire section on "cut resistent gloves." McMaster's good because they have a return policy, so you can get a couple pairs and try them on to see which ones you like. Return the rest.
